Our artichokes with crudaiola stem come from the Salento countryside, where we grow them in the open field. We have selected the Violet variety, native to the Brindisi area, for a specific reason: it is an artichoke with extraordinary crunchiness and a full and unmistakable flavour. Its name derives from the color that the external leaves and in particular the heart take on when it reaches maturity, starting in March.
At that point we are ready to collect it. Within 8 hours after harvesting we process and pot it. We do everything strictly by hand: a simple and artisanal process, with the same gestures as our grandmothers when they prepared preserves at home.
Once the external leaves have been removed and cleaned with a small knife, we preserve our artichokes in an oil-based cure, apple cider vinegar, brown salt and lemon juice. No artificial preservatives and no spices, because we want to enhance the natural flavor of the vegetables.
Not just good ones, but also beautiful to look at: these artichokes are ideal for your aperitifs and the most spectacular risottos. You can enjoy them ready to use from the jar, to season pizzas and salads, or use them in cooking for your first and second courses of meat.
