Crispy and fresh as if just picked, because they are stored raw: for our raw chicory we choose the tenderest shoots of Catalonia chicory, a native variety of Salento, in particular in the Galatina area, in the province of Lecce.
The entire process is done by hand, from the elimination of the external leaves to the cutting of the shoots, which we leave to mature for a few days in a delicate sweet and sour cure. At the end of this step, the sprouts or "scattuni", as we call them in dialect, they are potted in oil, without the addition of flavourings, artificial spices or preservatives. This way our raw chicory preserves their natural flavour, the vitamins and fibers they are rich in. To try in pucce and pinse, but also in a salad or as a side dish to a tartare.
